day seven with the wayward sailor

When we set up our St John trip we decided on one extra splurge: a full day on a chartered boat with sailing and snorkeling! We booked our trip with Captain Phil on the Wayward Sailor. Of course we booked before we knew anyone was going to be sick. And, once we started falling like flies, we tried to reschedule. And, when that wouldn't work, we crossed our fingers and carried on as if we were well. Then the day arrived and amazingly noone seemed all that sick!

We met Captain Phil in Cruz Bay. He was just as any captain should be--full of stories, educator of the sea, skin browned from the sun and very welcoming of our brood. We boarded his sailboat, made ourselves comfy and talked with Tarn--his crew! Tarn was as endearing as Captain Phil. Reading books to Claire, winning over Ella with homemade Brownies, and generally organizing, and keeping track of all the junk we just had to have with us.

We snorkled at two different locations. Sailed the seas. And, had a delicious lunch! I was too busy eating it to take any photos...hard to believe I know! But, never fear, you can make your own version...not sure how you'll get that salt air and warm sun ambience though.

Seafood Sandwich

Chop and combine in bowl: (equal amounts of each)
crab meat
red pepper
green pepper
celery
onion
Right before serving mix in:
sour cream (golf ball size)
mayo (just a little for consistency)
garlic n herbs (available from St. John Spice) - 2 tbs
splash of Italian dressing
fresh squeeze of lime
Serve sandwich mix on toasted multi-grain garlic bread.



Coleslaw


Chop and combine in bowl: (equal amounts of each)
purple cabbage
green cabbage - chopped finely
grated carrots
raisins - handful
Dressing - In a separate bowl combine:
Mayo (golf ball size)
balsamic vinegar - enough to make a runny consistency
sugar (2 tsp)
Mix in dressing and store in cooler.
Ready to serve.
